The technical report released by the Food and Agriculture Organization of the United Nations (FAO) in June of 2011 details that Quinoa is the only plant-based food that contains every essential amino acid, as well as trace elements and vitamins, but contains no gluten. The essential amino acids in Quinoa are found in the nucleus of the grains. This is unlike most other plant-based foods, such as rice and wheat, which house these nutrients in the exosperm (or shell). Quinoa contains proteins, iron, potassium, phosphorus, calcium, magnesium, zinc, vitamin A, vitamin E, and every essential amino acid.
The FAO proposed that 2013 be declared the International Year of Quinoa.
